Sunflower oil is used in cooking, salad dressings, and manufacture of fat spreads. Plant breeding produced varieties with improved fatty acid profile, such as the high-oleic sunflower oil, and at the same time resistant to insects. The traditional sunflower oil is high in PUFA content.
